WHY DO PEOPLE BLINK EYES?
November 25, 2013 by admin
We blink our eyes to keep them moist. The eye balls needs to stay moist, if the eyeball dries out it becomes itchy and irritating. Blinking keeps the eye moist and clean from debris.
Blinking your eyes lubricates your eyes, keeps out irritants from the surface of the eye. It is popularly mentioned ,” Take care of your eyes, you will never get a pair again”
Human eyes are windows to view the surroundings and God’s creation. Eyes are naturally protected with the eyelashes. Eyelashes are hairs attached to the upper and lower eyelids that create a line of defense against dust and other elements to the eye. The eyelashes catch most of these irritants before they reach the eyeball.
Blinking provides moisture to the eye by irrigation using tears and a lubricant the eyes secrete. The eyelid provides suction across the eye from the tear duct to the entire eyeball to keep it from drying out.
Why do we blink?
A blink is an involuntary reaction our bodies do on a regular basis. Blinking only lasts about a tenth of a second. In that tenth of a second we blink to re-lubricate our eyeballs
Blinking is the rapid closing and opening of the eyelid. You may have observed that if any dust or foreign particle gets into our eye you’ll start blinking. You will blink when you see bright lights, the eye is programmed to minimize damage caused by glaring light. It may sound funny, you also blink more and tears start rolling down when you peel or cut onions. This is observed in areas where smoke is generated, mobs when tear gas is spread to disperse people.
Blink rates vary quite a bit depending on emotional and mental state of mind. Stress and anxiety tend to increase a person’s blink rate. Face is a mirror of our emotions and your presence of mind is sometimes reflected in your eyes too. Intense concentration tends to reduce the blink rate, and if you’re in a situation that implies some danger, your blinking rate can go way down – basically helping to be alert , to look around quickly without missing things.
How many times do we blink in a minute?
On average a person blinks 15-20 times in a minute. People who are reading or deeply concentrating will blink less per minute and those who are nervous or lying often blink more times per minute. Most adults blink once every 5 seconds (12 blinks a minute).
There is a relationship between the numbers of times one blinks and ones emotions, if one is tired that person tends to blink more frequently than one who is well rested.
Do women blink their eyes more often than men?
This is actually a common myth. Men and women usually blink at identical rates. However, one study showed that women on birth control pills blinked 32% more.
Do infants and adults blink their eyes at the same rate?
Infants do not blink their eyes at the same rate of an adult. Infants blink one or two times in a minute. Infants also get a significant amount more sleep than adults do and, as discussed earlier, fatigued eyes blink more. However, throughout childhood the blink rate increases, and by adolescence, it is usually equivalent to adults.
Eye blinking can be a sign of good health
Eye blinking can be a definite criteria for diagnosing medical conditions. For example, excessive blinking may help to indicate the onset of Tourette syndrome, strokes, disorders of the nervous system. A low rate of blinking is associated with Parkinsons’s disease. Parkinson’s patients have a distinct stare that is very recognizable
When the muscles of the eye are tense due to straining to see or due to mental tension, a person’s vision is likely to become impaired. A simple practice to relax the eye is to blink more often, especially when reading, working on the computer, or watching TV. Staring at a book or screen dries the eyes and causes eye strain. Blinking relaxes the eyes and helps to keep them moist reducing the strain on the internal eye muscles. The Ayurvedic sadhana of clear vision is more than taking care of the eye. The eye is one part of a greater whole. The health of the eyes is dependent on a proper diet and healthy digestion as well as a calm, clear and relaxed mind.
HOW TO PREVENT AND CONTROL DIABETES

World Diabetes day is observed on November 14 of each year all over the world. It was introduced in 1991 by the International Diabetes Federation and World Health Organization in response to the alarming rise of diabetes all over the world.
Each year, World Diabetes day is centred on a particular theme related to Diabetes. Earlier topics have included diabetes and human rights, diabetes and lifestyle, diabetes and obesity, diabetes in the disadvantaged and the vulnerable, diabetes in children and adolescents.
For 2009-2013 the theme chosen is Diabetes Education and Prevention.
Let us understand what is Diabetes – prevention and control methods.
Diabetes is called Prameha in Ayurveda. The description and details of the disease and its treatment can be found in Atharva Veda, which originated between 3000 BC to 1500 BC. More urine than the actual intake of water is mentioned as the simplest sign of diabetes in Ayurveda.
Symptoms associated:
Individuals can experience different signs and symptoms of diabetes, and sometimes there may be no signs. Some of the signs commonly experienced include: frequent urination, excessive thirst, increased hunger, weight loss, tiredness, lack of interest and concentration, a tingling sensation or numbness in the hands or feet, blurred vision, frequent infections and boils, slow-healing wounds, vomiting and stomach pain.
People who lead a luxurious life with less physical work are prone to diabetes more than others. People with huge personalities are having a higher chance of being diabetic. Diabetic comes with stress, imbalanced diet and lifestyle.
Diabetes often runs in families. If one of your parents has diabetes, your chances of getting it immediately become significantly higher. You need to approach this situation consciously and prevent from occurring.
Ayurvedic practitioners have a multi-pronged approach to diabetes. Ayurveda, too, recommends lifestyle remedies that include limit to food that are high in sugar and simple carbohydrates, eating smaller portions through the day, eating a variety of whole-grain foods, complex carbohydrates and vegetables every day, less fat and using less salt. It is also important to avoid smoking, reduce intake of alcohol, sleep adequately, check blood sugar levels periodically, check weight periodically and maintain ideal body weight.
Control measures:
In Ayurveda, the concept is that mind and body are interdependent and inseparable. So diabetic patients should always try to be calm and cool. The mind should be set in a free and easygoing manner. It is always better to keep cigarette smoking and alcohol at a distance. If a person is addicted to alcohol and is not in a position to avoid it, then consume only brandy, whisky and rum, and avoid beer and sweet wine. Diabetic persons should strictly avoid alcohol on an empty stomach.
Based on your medical practitioners input plan for medicine intake. Intake of medicine will have an effect only when supported by a balanced diet. According to the calorie content, food items can be classified in to five categories.
- Pulses (grains)
- Meat, fish, nuts, ghee and oils
- Milk and milk products
- Fruits
- Vegetables
Each category is similar to one another in the quantity of calories contained. You can include any category in the diet. But frequency of food consumption is to be arranged in such a manner by taking in to account the patient’s age, lifestyle and nature of work.
Care should be taken to avoid glucose, sugar, cake, pudding, chocolate and sweets, potatoes, tapioca and fried foods are also not good. Diabetic patients must try to control their weight in proportion to their height and age.
The appetite of a diabetic patient is high and they tend to become impatient and angry. Actually it is not appetite but thirst.
- Onions, tomatoes, cucumbers and carrots can be consumed in the form of soup or salad
- Consume fresh fruits like oranges and lemons. Avoid fruit juices.
- Include almonds in your daily schedule.
- Avoid dry fruits such as raisins(dry grapes), figs as fruit sugar is concentrated.
- Lemon tea, black coffee without sugar can be used
- Lemon juice without adding sugar , tender coconut water are suitable
- Avoid white flour.
- Include sprouted beans i.e moong gram and chick pea as these are proteins.
Exercise:
Daily exercise is necessary to manage diabetes. Yoga is beneficial. Ayurveda books refers reducing diabetic complaints by walking miles and miles without using foot wears. Walking is the least form of exercise prescribed. Walking distance is to be adjusted taking ones age and physical condition into consideration.
Early morning and evenings are the most suitable times for walking. Diabetic person should walk regularly and be active. Ideally it is better to walk in groups as you will not skip the session due to laziness and secondly it is safe to be among a group. The walk should follow the schedule of low speed for first 5 minutes. A warm up basically. Slowly increase the speed and continue it for 30 minutes , then the last 10 minutes should again be in a relaxed mode. Keep your shoulders straight and hands free while walking. For those preferring an evening walk, leave a gap of 2 to 3 hrs after food intake.
To summarize, food and lifestyle, in addition to the prescribed medicine , can to a large extent control and cure diabetes.

HOW TO TREAT ANAEMIC CONDITION

You may be feeling weak, dizzy, panting for breath when you climb stairs or walk for short distances. Your skin will be looking pale. These are the signs of being anaemic. Do not overlook this health condition as the consequences are at times serious.
Anaemia may be defined as a condition in which there is a decrease in the quantity of haemoglobin or in the number of red blood cells. Nearly half the blood flowing in our veins and arteries consists of red blood cells which carry oxygen to the tissues. Approximately one trillion or 100 million new blood cells are formed daily in the bone marrow. The raw materials required in the production of these cells are iron, proteins, and vitamins, especially folic acid and B12. Of these, iron and proteins are essential in building up the red coloring matter called haemoglobin. A red cell has a lifespan of approximately one hundred and twenty days and is then destroyed and replaced. Each person should have about 15 gm of haemoglobin per 100 ml of blood, and a blood count of approximately five million red cells per millimetre of blood.
In Ayurveda, anaemia is known as Pandu Roga. It is one of the most important and very common dietary deficiency diseases.
Symptoms of anaemia:
The patient usually complains of weakness, fatigue, lack of energy and dizziness. The patient have a pale face, tired look, wrinkles appear on face, dull and tired looking eyes, poor memory, shortness of breath on exertion, headache, slow healing of wounds, and palpitations. The skin and mucous membranes look pale.
Causes of anaemia:
Iron is required to produce haemoglobin. The deficiency of iron is the main reason to cause anaemia. Anaemia may be caused due to loss of blood through heavy menstruation, child birth, injury, bleeding from the gastro-intestinal tract, deficiency of iron and vitamins in the body and defect in the formation of the blood in the body due to drugs, toxins and infections. Lack of hydrochloric acid in the stomach or worms can be a major cause for anaemia.
Treatment of aneamia –Diet changes
Spinach is a valuable source of high grade iron. After its absorption, it helps in the formation of haemoglobin and red blood cells. It is thus beneficial in building up the blood, and in the prevention and treatment of anaemia. Include Green leafy vegetables in your meals atleast thrice a week.
Beetroot juice contains potassium, phosphorus, calcium, sulphur, iodine, iron, copper, carbohydrates, protein, fat, vitamins B1 B2, B6, niacin, and vitamin P. With their high iron content, beets help in the formation of red blood cells.
Vitamin B12 is is usually found in animal protein, especially in meats such as kidney and liver. Other good sources of vitamin BI2 are dairy products.
Almonds contain copper along with iron and vitamins. Seven almonds should be soaked in water for about two hours and ground into a paste after removing the thin red skin. This paste may be eaten once daily in the morning for three months.
Til seeds and jaggery should be taken regularly as these are rich in iron. You can have in the form of til laddu. Children will love til and groundnut chikki too.
Usually when diet taken has high iron content and folic acid, the individual will have constipation issues. A mild laxative should be given to cure constipation as it may aggravate the condition.
There are many ayurvedic formulations recommended for curing anaemia. Meet the vaidyar at the center near our home and consult your health problems.
Women are the most affected by anaemia. Mainly because they over work and give less importance to a balanced diet. Make corrections in diet and live a healthy life. Exercise daily, go for a brisk walk for 30 mins daily. These are ways to keep oneself active and lively.

Hyper tension is also known as High Blood pressure. High Blood pressure(BP) can lead to Heart attacks, Strokes and paralysis of the body as it affects the brain too.
Most people with high blood pressure have no signs or symptoms, even if blood pressure readings reach dangerously high levels.
Although a few people with early-stage high blood pressure may have dull headaches, dizzy spells or a few more nosebleeds than normal, these signs and symptoms typically don’t occur until high blood pressure has reached a severe — even life-threatening — stage.
If you are diagnosed with hypertension i.e. a systolic/ diastolic pressure of 140/90 mmHg or above, then along with medications, you ought to make certain lifestyle changestoo, mainly – your diet.

Complications:
Uncontrolled high blood pressure can lead to : Heart attack or stroke due to hardening and thickening of the arteries, Aneurysm due to weakening and bulging of blood vessels leading to rupture and blood loss, Heart failure, improper functioning of other critical organs. Affects brain functioning – ability to think, understand, remember and learn too.
How diet can lower High Blood pressure:
Diet is the first line of defense for prevention of hypertension and related diseases.
A healthy diet is one of the most powerful ways to lower blood pressure. Many commonly available foods can reduce your High blood pressure in as little as two weeks. Allocate adequate time for sleep, exercise and you can see the major difference.
1. Sprouts
Sprouts contain an antioxidant called glucoraphanin that has the ability to lower blood pressure and reduce the inflammation in the heart, arteries and kidneys. The effects of this antioxidant can also reduce the risk of stroke and heart attack. Be sure to eat fresh sprouts as they have the highest concentration of proteins, minerals, enzymes, antioxidants, anticarcinogens, vitamins and minerals.
2. Spinach
Spinach is a folate-rich food that can lower your risk of hypertension. This leafy green vegetable also provides a completely absorbable, balanced protein along with antioxidants that help lower blood pressure.
3. Bananas
Bananas have a high content of potassium, which is known to lower blood pressure and reduce the risk of stroke. Bananas are also low in sodium, which is important for people with high blood pressure to avoid. Just one banana a day can provide a dose of potassium, helping to reduce blood pressure and fend off various cardiovascular diseases. Along with bananas, you can also eat other fruits such as apples, plums, pears, pomegranate, and mangoes.
4. Garlic
Garlic has anti-inflammatory and antiviral properties that can fight coronary heart disease by unplugging arteries. The gas that garlic produces in the stomach relaxes your arteries and lowers blood pressure. Eating one garlic clove a day can significantly reduce your blood pressure in as little as three months.
5. Tomatoes
Tomatoes contain lycopene, an antioxidant that helps protect your cells from the damaging effects of free radicals. The lycopene and other carotenoids found in tomatoes help in reducing high blood pressure and lowering the risk of heart disease. Tomatoes also contain nutrients such as calcium, potassium, and vitamins A, C and E that are good for your overall health. Tomatoes can significantly lower both systolic and diastolic blood pressure among those who have hypertension.
6. Potatoes
Potatoes are rich in potassium and also contain a blood pressure-lowering compound called kukoamines. They also contain an assortment of minerals and vitamins, such as vitamins C, B6, B1 and B3; magnesium, iron, zinc and phosphorus; as well as carotenoids and natural phenols. All these minerals and vitamins are good for your overall health. For best results, be sure to prepare your potatoes without frying them and eat them without adding butter, margarine or sour cream.
7. Almonds
Nuts like almonds provide protein and healthy fats that are good for your health. The high amount of good protein in almonds and almond milk helps lower high blood pressure and fight against diabetes and cardiovascular disease. The monounsaturated fats in almonds have been found to lower cholesterol levels, reduce arterial inflammation, and ultimately lower blood pressure. The potassium present in almonds can reduce the negative effects of sodium on blood pressure. Healthy fats also promote cardiovascular health.
8. Olive Oil
Olive oil has free radical-fighting antioxidants known as polyphenols. Olive oil also is high in monounsaturated fatty acids like oleic acid, which helps prevent high blood pressure. However, it is essential to bear in mind that olive oil loses much of its health benefits when heated. Due to this, try to use olive oil without cooking it. You can drizzle it on a salad or stir it into a bowl of roasted potatoes to enjoy maximum benefits.
9. Celery
This crunchy green vegetable has a compound called 3-n-butyl phthalide that relaxes the smooth muscle lining in blood vessels, reducing blood pressure. Celery is also a good source of vitamins and minerals, including vitamin C, potassium, calcium and magnesium that help reduce blood pressure.
10. Salmon
The omega-3 fatty acids as well as EPA (eicosapentaenoic acid), primarily found in cold-water fish like salmon, reduce inflammation and prevent high blood pressure. Also, salmon has low fat and high protein content that is good for people with high blood pressure. You can also eat other cold-water fishes such as mackerel, halibut, anchovies, tuna, and herring. If you do not like the taste of fish, you can opt for fish oil supplements.
These common foods can help lower your blood pressure, in very little time for few individuals. In addition, limit your intake of sugar and saturated fats as they can increase inflammation and harden your arteries, which results in hypertension.
Prevention of High Blood pressure:
Lose weight, Exercise regularly, Cut down salt intake, Cut down coffee intake, Limit the amount of alcohol , Stop smoking
Foods to avoid: Papads and pickles, Canned and Processed foods, Frozen foods, etc.
Go ahead, Be happy, Live long and healthy….
A GOOD SLEEP WILL MAKE YOU LOOK YOUNGER
September 6, 2013 by admin
A good sleep will make you feel fresh, face is glowing bright and you look younger too. An old adage says,” An hour before midnight is worth three afterwards”. Does this have any relevance in today’s corporate world?
Yes, an expert in Chronobiology (the study of the body clock), says: ‘There are set times when our body clock dictates that various processes take place in hair and skin.
‘From 8pm to 11pm is the time for hydration and stimulation, while 11pm to 3am is the time for nutrition and regeneration, and 3am to 5am is the time for resting.’
In current situations very few adults are in bed at 8 pm. Melatonin is the hormone that triggers sleep triggers around 11 pm, this is the time you get naturally tired. In reality seven or eight hours sleep is ideal for most individuals. If you sleep more than that your face looks puffy and you will feel sluggish.
At the same time insufficient sleep, continuous lack of sleep, poor- quality sleep has an extremely negative effect for an individual. They are not active, they are dull , looking aged on the outset and most of the time get irritated for small reasons. There are several cases reported of accidents during driving and at work.
When you are asleep, the cells rebuild and repair themselves (the growth hormone functions only at night). The function gets weakened if you do not sleep sufficiently.
Sleep specialists say that sleep-deprived men and women report lower libidos and less interest in sex. Lack of sleep seems to be related to an increase in hunger and appetite, and possibly to obesity.
Chronic sleep problems are linked to high blood pressure, heart disease, diabetes, and depression.
How important is posture during sleep?
No matter how well you sleep, you may still wake up with puffy eyes and dark circles if you sleep in an awkward position. These problems are associated due to the constriction of blood flow to the skin. Good posture is important during sleep.
When you sleep face down the blood vessels will become constricted and the circulatory system releases congested fluid from tiny flaps in the wall of these vessels. The dark circles are actually tiny blood vessels accumulating under the thin, delicate skin below the eyes.
As we age, it takes longer for these marks to disappear. As we get older our skin loses elasticity and collagen, and it does not bounce back into shape. More aging lines are formed permanently on the side of the face you normally sleep on.
The solution to this posture problem is to sleep on your back. Prevent fluid accumulation causing puffy eyes by keeping your head raised well above your body in bed. Maintaining posture in bed is very difficult but it is worth the effort. Train yourself to sleep on your back.
Insufficient oxygen in your bedroom affects blood flow to the skin, causing puffiness. Ensure the room is not too warm, if possible open a window for fresh air.
Sleep pattern recommended
When you sleep the levels of adrenaline and corticosteroids drop and the body starts to produce growth hormone. This is the time when the skin repair and growth process is initiated.
It is very important to have alternating periods of slow wave sleep (deep sleep) and Rapid Eye Movement (REM) i.e light, dreamy sleep.
You can follow this sleep pattern:
- Go to bed at a regular time. Set the alarm for the same time each day – even weekends – to develop a regular sleep-wake rhythm.
- Make sure the bedroom is dark. Pull curtain screens on. Put off lights.
- No coffee, tea or hot chocolate (they contain caffeine) before bed.
- Try deep breathing to relax different groups of muscles around the body. Don’t exercise just before going to bed.
- You need to have a luxury bath by adding aroma therapy oils in your bedtime bath .
- The right mattress is important. Your heels, back of the head and buttocks should sink just below the surface. Your neck, backs of the knees and hollow of the back should rest on the surface.
Effects on face
Not enough sleep can also make you more stressed, and everyone can see that tension. If you’re up late drinking and smoking, the skin is affected making you look aged. Alcohol affects sleep quality, leaving bags under your eyes. Smoking leads to premature wrinkles.
Night-creams should be applied to a really clean skin. Renewal of our skin is fastest at night, and this is why we are told night-creams can work wonders. Select a night cream based on your skin quality.
The good thing about the skin is that it recovers quickly. Get a good night’s sleep tonight and tomorrow, everyone will notice. They may even tell you how well-rested you look.
Ayurveda also reiterates that deep sleep rests the body and the mind. Scientists have now confirmed what rishis and vaidyars have been saying since ages. Our daily dose of sleep regulates our weight, strengthens our immunity, protects our cardiovascular health, repairs our tissues and cells, and restores our energy. Sleep also allows us to process, consolidate, and retain new memories; it balances our emotions, makes us better problem solvers, and feeds our creativity.
You will look younger and smarter after a good sleep.
ARE THE TINY RED MOLES ON YOUR SKIN CANCEROUS?

Have you been noticing tiny red dots surfacing on your skin at various places? Is the red dot on the skin constant or is it varying with time? Is the red mole dangerous or linked to cancer? These are questions that keep bothering the moment we see a new development in the body. Do not panic. Here are a few answers to the questions that go through an individual’s mind the moment they see or feel anything new in the body.
The red dots appear a bit off-red, or bright dark pink. These are called cherry angiomas and are completely harmless. They are blood vessels above the surface of the skin, come with age, and will never become a problem. Angiomas are also called hemangiomas, and they can be flat, then raise up into bumps over time, but most lesions have the same bright cherry red color. Angiomas will not disappear.
Few causes for red moles to appear are atopic dermatitis or Psoriasis. These skin conditions can create little red dots or spots on the skin. The red moles appear on body parts that has more exposure to sunlight.
Moles are normally caused by an abnormality in the melanin within the skin although some people are born with moles. Melanin makes the pigment which is what give your skin its color. Generally moles do not itch or burn.
Not all red moles are cancerous, but some of them are signs of melanoma. You can ascertain a red mole is dangerous if it changes size or shape, especially when it is exposed to the sun for a period of time. If your red mole does not change its shape or size, you can forget it.
If you begin to see red moles on your skin that fluctuate in shape and size (especially when in contact with sunlight), go to a dermatologist immediately. The best chance when fighting cancer is to attack it early. The appearance of a red mole causes concern as it is a new development and you will be frequently asked for its presence. They look like pimples rather than a beauty spot.
At times the mole is prominent and you feel awkward. There are various ways to remove red moles if you are conscious and concerned of the position on the skin. Technology had advanced and you can consult any dermatologists to confirm and assess the skin . You can opt for surgical removal or laser surgery. It is painless and requires less time too. You can do this in a skin specialist clinic itself. The red mole area will be numbed and the red mole removed. A few days of medication and your skin is back to normalcy.
There are some over the counter medications too for application. Never do self diagnosis and buy medicines on your own. Do consult a skin specialist and clarify your doubts and based on prescription proceed for treatment.
If your red mole never changes its shape or size, you can forget it as long as it doesn’t bother you.

IS IT SAFE TO USE LEFTOVER ONIONS THE NEXT DAY?
July 10, 2013 by admin
There is a lot of rumor that cut onions or left over onions are unsafe to consume the next day. It causes infections and diseases .From times immemorial onions are being used in cooking. Onions are basically soft and are prone to damage upon handling. The rate of onion decay will depend upon the level of bacterial present, the type of bacteria, temperature, oxygen and light.
Few precautionary measures to avoid onions spoil and decay. When you purchase onions select dry ones. Handle onions with care. Store them in a dry, cool and well ventilated place. Do not place them in poly covers which are sealed. Lack of air will make onions rot. Place onions in meshed trays such that aeration happens.
Onions are high in vitamin C and are a good source of fiber and other key nutrients. Onions are fat free and low in calories. Onions have anti-cancer properties too. Onions are added to dishes to enhance the taste and add flavor. It is consumed fresh as salad too.
Reasons for onions decay:
When you cut a vegetable the cell walls are disrupted, water and fluids are released and these may contain nutrients that enhance bacterial growth. So if there are bacteria present the cut surface will provide an enriched environment for more growth. Placing the onion or vegetable in the refrigerator will typically slow down the bacterial growth, but does not inhibit it completely (and some bacteria actually grow very well at refrigeration temperatures). So any vegetable, cut or not, is likely to have bacteria that will result in decay eventually, even if refrigerated.
Chopped onions do not decay on its own. It decays due to the environmental conditions. The bacteria attacks and the surface starts decaying. Onion sliced with tail is used for oiling dosa pans. Dispose it the same day. Retention of onion with oil will attract bacteria and it will start smelling too.
Suggest you place the left over onions in air tight packs in the refrigerator. Left over onions should be stored in a hygienic manner to avoid deterioration and color change. Consume it within 2 to 3 days. If you observe color change or a slimy feeling- dispose them off.
Left over or cut onions are not poisonous. They can be used when stored in a refrigerator, in a sealed container at the proper temperature of 40°F or below for up to 4 days. You can also store them safely in zippered bags and use them within a day or two. But onions can lose their nutrient value when stored over a period of time.
General information about onions:
It is observed the pungent odor is absorbed by the container in which the onions are stored. To remove unpleasant odors , wash these containers with lime juice or lemon peels.
You may have observed that at times sauted onions tastes bitter. High heat makes onion tastes bitter. Therefore always sauté onions on medium or low flame to avoid bitterness. People do sauté chopped onions on low flame and refrigerate. This can be used for recipes that require frying of onions.
